Only a few states have officially named a state pastry. Maine’s is Whoopie Pie; Connecticut’s is the snickerdoodle cookie; Texas has two: the sopaipilla and strudel. Wisconsin’s is kringle, a Danish delectable that customarily is as wide as a steering wheel: a great round wreath of flaky, butter-layered dough stuffed with fruit preserves, cheese, or chopped nuts and gilded with a sugar glaze. Once unique to a handful of bakeries in the city of Racine, kringle has earned popularity elsewhere, and in modified form, such as the cardamom-scented, single-serving, braided version at the Swedish Crown Bakery up in Anoka, Minnesota. For classic kringle, Racine still is the place to go; and among its several sources, our favorites are O&H, Bendtsen’s, and Larsen Bakery.
