As its name suggests, Super Duper Weenie is primarily a hot dog place — one of America’s best. But it is also a great source for what’s billed as a Mighty Ity Italian sausage sandwich. When chef Gary Zemola gave us the recipe, he said that he felt the key to making it great – beyond using excellent ingredients – is time. “Don’t rush anything when making a Mighty Ity,” he said. “Let the flavors meld.”

1 pork sausage patty or 2 links of pork sausage
1 green or red bell pepper, seeded and sliced lengthwise, 1/4 inch thick
1 medium size Spanish onion, sliced lengthwise, 1/4 inch thick
1-2 clove(s) of garlic, peeled and smashed
1 Portuguese roll or hard roll of choice, sliced horizontally
1-2 slice(s) provolone cheese or mozzarella
salt & pepper to taste
Heat a heavy cast iron skillet over medium heat. Add the sausage, allowing the fat to render. Cook for about 3-4 minutes, flip and cook on other side for another 3-4 minutes. Remove the sausage from the pan and set it aside.
If the sausage was too lean to leave a good film of oil in the pan, add 1 teaspoon of extra virgin olive oil. Add the peppers, onion, and garlic. Turn down heat to low, allowing the vegetables to soften and brown. Stir once, just enough to scrape the bits of pork and fat from bottom of pan and turn the vegetables over. Cook until the onions are translucent and the peppers are soft and browned and the garlic is slightly golden.
Add the sausage back to pan and layer the cheese on top of it. When the cheese is melted and the sausage heated through, assemble the sandwich by placing the sausage on the bottom of the roll and topping it with the hot vegetables from the pan. Add salt and pepper to taste.
