Bacon

Bacon has enjoyed extreme popularity in the last few decades. Extreme? Consider bacon milk shakes and brownies, bacon jam, bacon butter, and pizza crusts and taco shells made entirely of woven bacon. Even before contemporary mania, bacon had edged its way from breakfast meat and a participant in BLT sandwiches and Cobb salads onto cheeseburgers. (The bacon cheeseburger was conceived in Pensacola at Jerry’s Drive-in, which opened in 1939 and still is thriving.) It also has long been used in a non-starring role to lard meat loaves and roasts and add porky flavor to boiling greens, beans, and other vegetables.
