Tarts

Tarts are a dish with infinite possibility. Created on a shortbread pastry base, most are sweet, filled with fruit or jam; but some are savory, such as egg-rich quiches. Tarts can be as big as a whole pie or small, single-serving size. When a tart is made with fruit cooked well enough to caramelize, it is known as a tart tatin, after the French Hotel Tatin, where it first was served in the 1880s. Legend says it was created as a mistake: an apple pie left in the oven too long and served upside-down.
