Spaetzle are small egg-noodle dumplings that accompany the likes of Hungarian chicken paprikash and German sauerbraten. The Pantry of Little Rock uses spaetzle for a mac & cheese dish that includes Edam cheese, caramelized onions, and bechamel. The Rock Cafe on old Route 66 in Oklahoma creates something similar by dressing spaetzle the way a hash-house chef might dress hash browns – with melted cheese, tomatoes, peppers, and onions.
