Sirloin Steak

Among the more affordable cuts of steak, the sirloin is relatively lean but nonetheless flavorful. Of all the steak cuts, it is the one that suffers most from overcooking. Its dearth of marbling makes it dry out and turn tough all too quickly. Rare to medium-rare, it’s outstanding.
