Seafood Gumbo

A pillar of both Creole and Cajun cuisine, gumbo has as many variations as there are cooks. Seafood frequently is the starring ingredient: Shrimp, crawfish, oysters, crab all can be included. They often are paired with smoky andouille sausage and perhaps even duck or chicken, too.
