Rhubarb Pie

Known as “pie plant,” rhubarb would seem an unlikely candidate for pie. It is, in fact, not a fruit but a vegetable; and all alone, it is fiercely tart. But add plenty of sugar and it combines with the stalk’s tartness to become a delirious duet. For the same reason, rhubarb often is paired with strawberries. Rhubarb pie almost always has a top crust.
