Red Velvet Cake

Red velvet cake is really red – bright red and velvet soft. It is essentially a chocolate cake. Old-style versions derive their color from non-Dutch chocolate, which is reddish; but nearly all modern red velvet cakes are bright red thanks to an astonishingly large measure of food coloring. There are red velvet cupcakes and sheet cakes; the classic version is a layer cake liberally slathered with nut-dotted sweet cream cheese frosting.
