Quesadilla

A quesadilla is like a Mexican grilled cheese sandwich: a soft tortilla folded over cheese and grilled, or possibly two tortillas sandwiching the cheese. To that basic formula, cooks may add shredded pork or chicken, caramelized onions or garlic, a vegetable medley (chile in particular), even crab or shrimp. Marination Ma Kai, a Korean restaurant in Seattle, makes kim chi quesadillas.
