Pumpkin Pancakes

Most often made with canned pumpkins and, of course, a regular character on autumn menus, pumpkin pancakes are fertile territory for customization, such as adding toasted pecans to the batter, using buttermilk for a twang or chocolate chips for a shot of sweetness, and whipping egg whites to make them fluffy. They always are rife with spice: cinnamon, nutmeg, ginger and, of course, pumpkin pie spice.
