Potato Pancakes

Potato pancakes, which are savory rather than sweet, are composed of shredded potatoes (sometimes mashed potatoes), onions, and herbs, their spuddy, cream-rich interior encased in a crisp, griddle-sizzled crust. Customary condiments are apple sauce and/or sour cream. In Jewish restaurants, they are known as latkes; and at Manny’s deli in Chicago you can get a corned beef sandwich in which potato pancakes take the place of rye bread!
