Polenta

Polenta is a served as hot cereal or as crisp-fried slices from a loaf. It is a distant relative of such other corn-based dishes as spoonbread and grits and, like them, it most frequently is a companion for meat – pork and sausage in particular. Cooled, formed into a loaf, sliced, and fried, its sometimes is served under a mantle of marinara sauce and, as such, can be a vegetarian main course.
