Because their flavor can be faint, pears are not among the most favored pie fillings. But when they are frosted with marzipan or they are hibiscus-poached, as at at Tucson’s B-Line, or when the crust is especially buttery, creating a sort of pear dumpling, as at Oregon’s Pennington Farms, pears do make a memorable pie. Pie cooks sometimes combine apples with the pears to create a more fruit-forward flavor.
