Starting with the combination of cool noodles and mayonnaise and maybe some bits of pickle and celery, pasta salad will go any which way. It might be a mild refresher to accompany a sandwich the way cole slaw does. Or at its most complex, it can be what’s made at Anthony’s Italian Deli in New Orleans: a wild ride of fusilli stirred together with turkey, salami, pumate, several different kinds of olive, mushrooms, and Romano cheese, all blanketed with oregano and served with balsamic vinaigrette on the side.
