Migas

A breakfast dish first popularized in Tex-Mex restaurants in the Southwest and now found on Mexican menus coast to coast, migas is (or, more correctly, migas are) eggs scrambled with pieces of corn tortilla. They may also contain any combination of diced tomatoes, onions, crumbled chorizo sausage, melted cheese, hot peppers, or salsa.
