Matzoh Ball Soup

In the world of Jewish comfort food, matzoh ball soup is a star, right up there with chicken soup. In fact, that is what it is: intense, golden chicken broth, but lacking chicken and vegetables, with a single large matzoh ball or possibly a few smaller ones. Aside from the flavor of the broth itself, what measures the quality of matzoh ball soup is the composition of the matzoh ball. At its best, it is so tender that a spoon rested on its edge at the top of the ball will glide right through with no force other than that of gravity.
