Matzoh Ball Soup

In the world of Jewish comfort food, matzoh ball soup is a star, right up there with chicken soup. In fact, that is what it is: intense, golden chicken broth, but lacking chicken and vegetables, with a single large matzoh ball or possibly a few smaller ones. Aside from the flavor of the broth itself, what measures the quality of matzoh ball soup is the composition of the matzoh ball.
