Lobster Bisque

Whereas stew is chunky, as is most chowder, bisque is creamy. If it’s lobster bisque, it will almost surely contain pieces of the sweet, pink meat. The liquid itself may have a lobstery flavor. It is not uncommon to float a pat of butter on top, where the heat of the bisque melts it into a golden puddle in the center of the bowl.
