Hot & Sour Soup

On the menu of Chinese-American restaurants, hot and sour soup is a broth that is pepper-hot with a distinct sour tang. It contains mushrooms, bamboo shoots, possibly other vegetables and, in some cases, pieces of diced pork or tofu. It is served in small portions as an hors d’oeuvre.
