Guacamole

Every Mexican menu includes guacamole, which is avocados mashed or chunked, most often seasoned with lime juice, peppers, and cilantro and possibly including diced tomato and chopped onion. Fancier restaurants make a tableside production of creating it, using a pestle and molcajete (a stone mortar).
