Green chile, listed on local menus by its Mexican name, chile verde, is a dish found along the Rio Grande into New Mexico’s Mesilla Valley. It is very different from the more familiar red stew known as chile con carne. Green chile (aka green chile stew) often contains potatoes and onions and very likely pork instead of beef. Its heat level varies from mild/comfort to torrid, depending on the peppers used.

I love green chili….. best I’ve ever had was in and around Phoenix AZ! My favorite was deep fried green chili burro covered in enchilada sauce and cheese.
