Feta cheese and oregano-charged olive oil dressing are the basics of a Greek salad, which sometimes is listed on menus as a Mediterranean salad. It also contains tomato and cucumbers, black olives, sometimes pieces of bell pepper and a few pepperoncini, as well as minimal lettuce. At Bessemer, Alabama’s Bright Star restaurant, the traditional dressing is accompanied by a cup of creamy garlic dressing. Savvy diners mix the two together. Greek salad can be a prelude to dinner, but its ingredients make it hearty enough to be a main course. Jordan’s, a Connecticut diner/pizzeria, offers a meal of “salad pizza,” which is a flatbread crust arrayed with Greek salad.
