Gateau Sirop

Gateau sirop is a moist, aromatic spice caked sweetened with dark cane syrup. It is a dessert and coffee companion in cafes and fine dining rooms in Cajun country where cane sugar is harvested. At the estimable Prejean’s of Lafayette, it comes gilded with Frangelica cream sauce; at Cafe des Amis in Breaux Bridge, it is dotted with roasted pecans and available a la mode.
