A specialty of restaurants in and around Syracuse, New York, the fretta is a scrambled-up fritatta: an anything-goes breakfast whirl of at least eggs, broccoli, pepperoni, fried potatoes, and cheese, but also possibly peppers, onions, mushrooms, ham, and sausage. Even small frettas seem large; a diner called Mother’s Cupboard in Syracuse offers a fretta that weighs six pounds, billing itself as “Home of ‘the whole’ (frittata).” The menu advises, “Only get a half … You’ll NEVER finish a whole. But if you want your picture on the wall and a T-shirt, GO FOR IT!”
