Eclair
Most commonly an oblong pastry about the size of a bunned hot dog, eclairs are flaky, steam-puffed choux dough filled with pastry cream or whipped cream and topped with chocolate icing. Variations of the classic include fillings that are coffee or chocolate flavored and icing that is butterscotch or caramel. The Well-Bred Bakery & Cafe in Asheville, North Carolina, makes a “Mountain Eclair” that is the size of a birthday cake, filled with a mix of pastry cream and whipped cream, and completely enclosed in a thick layer of chocolate ganache.
