Variations of the classic include fillings that are coffee or chocolate flavored and icing that is butterscotch or caramel. The Well-Bred Bakery & Cafe in Asheville, North Carolina, makes a “Mountain Eclair” that is the size of a birthday cake, filled with a mix of pastry cream and whipped cream, and completely enclosed in a thick layer of chocolate ganache.
