Dutch Letters

Dutch letters, unique in America to the Dutch-ancestored town of Pella, Iowa, are crisp, flaky, giant-size puff pastries in the shape of the letter S. They are eaten at room temperature or slightly warmed and some are filled with almond paste. Why S became the bakers’ favorite letter remains a mystery.
