Croquetas

On the bill of fare of Basque restaurants in Nevada and Idaho, croquetas are croquettes, usually spherical in shape, fried crisp and golden brown on the outside, and containing a creamy mix of chicken or ham and bechamel within. They serve as a side dish to a meal or are one of several tapas in taverns with a Basque or Spanish accent.
