A crispie, found in European bakeries of the upper Midwest, is a coffee-companion pastry that is like a round, spiral palmier: firm and flaky-crisp, spangled with sugar. It is made from puff pastry dough, which is as buttery as that used to make croissants, but without any yeast to leaven it.
