Corned Beef Hash

Well-made corned beef hash is one of the great blue-plate meals of the American kitchen. A mix of corned beef and potatoes (and probably onions), it can be rugged shreds or a pulverized pancake, pillow-soft or crunch-edged. While it’s typically considered diner fare (as in “hash house”), chefs delight in making deluxe versions by adding spice, hot peppers, and other root vegetables.
