Corned Beef & Egg

In old-time delicatessens, eggs and corned beef come together in an open-face, unfolded omelet. This is a circle of eggs in which nestles a heap of corned beef shreds or slices. Salami, bologna, and pastrami are alternate open-face players. The more universal pairing of eggs and corned beef is when the latter takes the form of corned beef hash.
