Chili Omelette

In New Mexico, asking for a chili omelet might get you eggs folded over whole roasted pods, maybe along with melted cheese. Anywhere else, a chili omelet means that the eggs pocket a lode of chili. It can be all-meat chili or meatless, and it can be garnished with things you might add to a bowl of chili: chopped onions, shredded cheese, maybe even crumbled-up tortilla chips.
