Many diners and lunch counters offer a chili-cheese omelet, which is, as its name says, an omelet filled with cheese and chili. It can be a heavy dish, especially if fried potatoes are thrown in, but it also can be well balanced. In that latter category is the chili-cheese omelet made at Marcy’s Diner in Portland Maine. Yankee chili (with beans) is blended with creamy melted cheese in an envelope of egg that is as thin as a crepe.
