Chicken Salad Sandwich

Chicken salad is flexible – an opportunity for cooks to create something new. The typical version is chopped chicken (usually white, but sometimes dark, too) with mayonnaise and maybe an herb or two. More creative iterations are made with curry and buttermilk dill dressing (at Little Rock’s Root Cafe), mesquite grilled chicken and cilantro-avocado sauce (at Viva Las Arepas in Las Vegas), cranberries and goat cheese (at Harvest House in Landrum, South Carolina), and fennel, oranges, cheese, pickled red onions, and pea shoots (at Souvla in San Francisco).
