Chicken Liver

Chicken livers are enjoyed in one of two ways: whole and deep-fried, which are sybaritically luscious; or chopped, which might be even more luscious. The one ingredient shared by all great chopped livers is schmaltz – chicken fat – smooshed into the chopped livers, which also may contain bits of crisp-fried onion.
