Chicharrones

Chicharrones is how fried pork rinds (aka cracklin’s) are listed on the menu of Latin-American restaurants. They can be nothing but fat or mostly fat with a few striations of meat – deep fried until mostly crisp but a little chewy. They are a pop-in-the-mouth snack or something to add to another dish for porky punch.
