Chia Pudding

Chia seeds are most often sprinkled atop other foods or mixed into healthful smoothies. One of their most felicitous uses is as the basis for pudding, made with whole seeds that are similar to tapioca. Found mostly in Latin-American restaurants but otherwise rare, it most often is served for breakfast, perhaps garnished with caramelized bananas and syrup.
