Carrot Cake
Although it does contain shreds of carrot, carrot cake with its plush cream cheese frosting on top and between the layers is not exactly a nutritionist’s dream. It frequently includes nuts, pineapple, or coconut in the batter and/or frosting. The most extreme example is served at the Tiny Diner in Minneapolis, where it is nearly as dense as fudge and is served drenched with caramel sauce and sprinkled with spiced walnuts.
