Carne asada means grilled meat. In tacos, it refers to slices or nuggets of beef, which typically is skirt steak but can be any cut of steak. Typically, the meat is marinated or dry-rubbed before getting grilled, often over mesquite. Tijuana’s Tacos Salceados Ermita offers tacos in which the meat is wrapped in cheese before getting put into a warm flour tortilla. In Austin, Texas, restaurant El Alma includes caramelized onions and guacamole with the beef. At Tacos Apson in Tucson, the Hass taco is carne asada, cheese, and green chile. Also in Tucson, the vegetarian restaurant Tumerico offers a pseudo-carne asada taco filled with eggplant chicharones and soy chorizo doing an impersonation of meat.
