Bean nomenclature in the South is a hot mess, albeit a delicious one. The ones menus refer to as butter beans are lima beans – large, pale yellow or light tan legumes that are fairly flat but meaty. People outside the South sometimes call them Dixie beans. Cooked with bacon or hamhock, they don’t usually get dolled up too much. Buttered butter beans are traditional, as are butter beans in a light cream sauce. They often find their way into casseroles.
