Buffalo Burger

Buffalo – technically, bison – is a symbol of the old west. That is why restaurants that want to create old-west ambiance put it on the menu – as steak, stew, or burgers. Just like regular beef, the fat content of bison varies; but as a rule, it’s significantly leaner than cattle. That means that unless you are on a low-fat diet, you might consider a generous mantle of cheese to add succulence to a burger made from it.
