An obscure breakfast dish unlikely ever to inspire McBrains, brains and eggs is found in hoary diners of the South and lower Midwest. While sliced or whole brain sandwiches once were a popular bar room specialty in St. Louis, today cooks scramble them along with eggs. Since the discovery of mad cow disease, pig brains are more commonly used.
