Beef

Not counting such beef superstars as steak, burgers, pot roast, corned beef, and BBQ brisket, there are many American dishes that are all about beef. Italian beef vies with (all-beef) red hots as Chicago’s #1 street food. Beef on weck is Buffalo’s favorite sandwich. “Hot beef” is celebration food in the Upper Midwest. Iowa loosemeats take seasoned beef to a whole new level. Every great New Orleans po boy shop offers sandwiches of roast beef and debris (cutting board scraps) or simply debris and gravy. In Mid-Atlantic coffee shops and diners, you might find chipped beef, aka S.O.S.
