Among America’s bounty of distinct regional dishes made from them are Boston baked beans (with bacon or salt pork and molasses), Southwest cowboy beans (with BBQ brisket), Ozark pit beans (larded with pork and blanketed with BBQ sauce), refried beans (mashed with lard – a Mexican dish), Creole red beans and rice (and sausage, too), Sonoran hot dogs (beans are among their usual garnishes), Cincinnati 5-way chili, Hawaiian red bean & rice candy, Portuguese bean cakes along Northeastern shores, the ever-present yellow rice and black bean combo on Florida’s Cuban dishes, and Maine’s bright red franks and beans.
