Beans are a natural companion to barbecue, their forthright starch a foil for the meat’s protein punch, but BBQ beans take that value to another level. Cooked low and slow like the meat, generally wallowing in spicy sauce, they are laced with shreds of sweet, fatty pork that melt into pure flavor. It is customary to serve such beans in a little crockery bean pot.
