Barbecue Shrimp

The term ‘barbecue,’ when applied to shrimp throughout much of the Deep South, is not synonymous with slow-smoke cooking. It means that the shrimp are sauteed or cooked over charcoal and sometimes cossetted in barbecue sauce. New Orleans is notably fond of them, on a plate or in a po boy sandwich.
