Bacon & Eggs

There used to be a restaurant just outside of Minneapolis that was called Johnson’s Bacon and Egg Cafe. The food was town-cafe excellent, especially its plate of bacon and eggs, which also included a broad cake of crisp-edged hash browns and a couple of pieces of buttered toast. That’s the thing about bacon and eggs, which are available in every place that serves breakfast: They are the beginning. Potatoes, toast, fruit, grits, or even pancakes are always added. In fact, the Bacon and Egg Cafe’s specialty was “The Big Johnson”: two eggs, toast, potatoes, pancakes, spuds, and bacon, ham, or a length of smoky sausage.
