Baba Ganoush

Cooked eggplant mashed together with sesame paste, olive oil, and seasonings, baba ganoush is a Middle Eastern dish most often presented as an appetizer, along with pita bread for dipping and scooping. It it is served at room temperature and can be either smooth or chunky.
