Arancini

Arancini are little spherical croquettes of deep-fried rice, often laced with cheese, tomato sauce, bits of ham, or herbs. They are an hors d’oeuvre or snack food common in Italian bakeries and restaurants. Beef and green-pea arancini are classics found at Galleria Umberto Pizzeria in Boston. The concept also inspires culinary creativity, as at Frog Hollow Tavern in Augusta, Georgia, where the arancini are made with “dirty” Carolina gold risotto.
