Yes, alligator meat does taste like chicken: fish-flavored, dark-meat chicken. If you want the essence, have ribs, grilled or smoke-cooked. Tail meat is more tender and milder. One good place to sample it is Cosse’s on the Beach in Pensacola, where gator biscuits come swimming in a great pool of honey and the fried gator tail’s sweet coating delivers good crunch. Alligator Benedict also is on Cosse’s menu.
