Albondigas Soup

Albondigas are Mexican meatballs, seldom found anywhere but in soup. Albondigas soup itself is based on chicken stock and usually also contains an array of vegetables and herbs. Most meatballs are beef, sometimes turkey or chicken. Taqueria Pico de Gallo in Tucson offers albondigas de camaron, which is shrimp-ball soup.
